Rush Hospital to offer healthy cooking class

The holidays may be a time when that strict diet can fall by the wayside for some people. But with a diabetic, splurging can mean a fate worse than extra weight.
Diabetes is the fourth leading cause of death by disease in the United States, and when not kept in check can lead to blindness, heart attack, stoke, kidney failure and amputations. In Mississippi alone, more than 240,000 people live with the disease and another 80,000 are said to be unaware they have it.
While not all the problems associated with diabetes and food can be sifted away, a few changes in recipes can help make holidays a little sweeter for the diabetic, she said.
Members of Rush Foundation Hospital's dietary departments plan to show about 50 guests just how simple the task can be with the hospital's upcoming Rush Holiday Healthy Cooking Class.
Unlike an instructional class, Carney said diabetics and their families will be treated to a complete "traditional" meal in a dining room setting where they can learn while they eat.
The class is scheduled to take place at noon Tuesday in the private dinning room in Rush's cafeteria. The meal is free of charge and open to those who call and register before Tuesday.
Turkey and low-fat gravy, cornbread dressing prepared with no egg yolks and fat-free chicken broth, sweet potato casserole, green beans, mixed fruit and Sugar-Free Jello are on the menu.
She said enjoying holiday treats and staying health begins with moderation.
