Today we are offering you some tasty meat dishes, vegetable casseroles and a choice of three good desserts.

You can combine these in any order to make your family a hardy, delicious meal. Cornbread or hot biscuits would make the meal complete. Be sure to try the fruit pie.
It is a real treat and healthy, too. Sneak in those fruits and veggies any chance you get.
Crispy Chicken
1 c. flour
1 T. salt
1 t. pepper
1 c. buttermilk
1 t. baking powder
Mix buttermilk and baking powder together and set aside. Mix flour, salt and pepper together in a bag. Shake chicken parts in flour after dipping into milk. Drop into hot oil. Cook until brown.
Tuna Burgers
1 (13oz.) can of tuna (in water)
3/4 c. whole wheat saltine cracker crumbs
1/4 t. pepper
1 lg. egg
1/3 c. tarter sauce
4 lg. sandwich buns
red leaf lettuce
2 small tomatoes
1 T. oil
Drain tuna. In a large bowl with fork, mix tuna, cracker crumbs, pepper, egg and tartar sauce. With hands, shape tuna mixture into four 3 inch round patties. In a skillet over medium heat pour in hot salad oil. Cook patties until brown on both sides. Cut each bun horizontally in half. Arrange leaves on bottom. Top with tomato slice and bun.
Layered Tostada Bake
1 lb. ground beef
1/2 c. chopped onions
1 (1 1/4 oz.) taco season mix
1 (8oz.) tomato sauce
1 (16 oz.) refried beans
1 (4oz.)whole green chilies, drained and chopped
1/2 c. ripe olives sliced
1 c. Bisquick
1/2 c. corn meal
1/4 c. milk
1 egg,beaten
2 T. oil
1 c. sour cream
1 egg
2 c. shredded Cheddar Cheese
Heat oven to 375. Grease 12×7 baking dish. Cook and stir ground beef and onion in skillet until done. Drain. Stir in season mix, tomato sauce, beans, chilies and olives. Mix baking mix, corn meal, milk, one egg and oil until moistened and beat for 30 seconds. Spread in dish. Spoon beef over dough. Mix remaining ingredients and spoon over beef mixture. Bake 30 minutes.
Scalloped Corn
1 No. 2 whole corn (2 1/2 c.) or cream style corn
1/2 to 3/4 c. milk
1 c. dry cracker crumbs
1/2 sm. onion
3 T. chopped green pepper
Pepper
2 T. butter
Combine whole corn and 3/4 c. milk or cream-style with 1/2 c. milk. Add crumbs, onion,green pepper, and seasoning. Pour into greased 1 qt. casserole. Dot with butter. Bake at 350 degrees for 30 minutes. Serves 6.
Broccoli Rice Casserole
1 sm. onion
3 T. butter
1 pkg. frozen broccoli
1 c. mushroom soup
1 1/2 c.cooked rice, salted
1 c. grated Cheddar cheese
Almost 1/2 c. milk
Saute onion in butter. Add broccoli and mushroom soup. Cook 10 minutes on medium heat. Add rice, cheese, and milk. Pour into buttered casserole and bake 25 to 30 minutes at 350.
Bacon Twists
12 slices bacon
Preheat oven to 375 degrees F.
Twist each slice of bacon into a tight spiral and thread each end onto 2 metal skewers, continue with the rest of the slices.
Lay the skewers on the rack of a broiler pan. Bake the bacon in the middle of the oven for 15 minutes, or until crisp.
Remove skewers and transfer with a slotted spatula to paper towels to drain.
Fresh Apple Pie (Love this recipe)
2 c. grated apples
Allspice to taste if wanted
1 unbaked pie shell
1/2 stick butter or margarine (melted)
3/4 c. sugar
3 T. flour
1 egg yolk
1/4 c. skim milk
Mix together apples and spice and place in unbaked pie shell. Combine sugar and flour. Stir in egg yolk, butter and milk.Pour over apples and bake at 325 for 1 hour.
Heavenly Fruit Pie
1 sm. pineapple (chunks)
1 sm. can peaches
1 Eagle Bran
1/3 c. lemon juice
1 lg. Cool Whip
1 small orange peeled and cut up
2 pie shells, baked (It makes 2 pies!)
Drain pineapple and peaches. Combine with milk. Fold in lemon juice, Cool Whip and orange and pour into pie shells. Makes 2 pies.
Million-Dollar Pie
1 can sweetened condensed milk
1/4 c. lemon juice
1 no. 2 can pineapple
2 c. mandarin oranges
3/4 c. nuts
1 lg. Cool Whip
3 graham cracker crusts
Mix milk and lemon juice. Drain fruit. Add to mixture with nuts. Fold in Cool Whip. Pour into pie crusts. This freezes well.
